Ingredients

For the Cake Bites:

  • 1 gram Saffron Co. Pure Saffron Threads

  • 2 tablespoons warm water

  • 1 tablespoon Saffron Co. Saffron Vanilla Aged Extract

  • 3 large organic eggs

  • 1 cup (200g) granulated sugar

  • 1 1/2 cups (180g) all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3/4 cup (170g) unsalted butter, melted

  • Zest of 2 large organic oranges

  • 1/2 cup (120ml) freshly squeezed orange juice

For the Saffron Glaze:

  • 1/2 cup (120ml) freshly squeezed orange juice

  • 2 tablespoons Saffron Co. Pure Saffron Powder

  • 1 cup (120g) confectioners' sugar

  • 1 teaspoon Saffron Co. Saffron Vanilla Aged Extract

Garnish:

  • Slivered almonds

  • Edible gold leaf flakes (optional)

Instructions

Preparing the Saffron Infusion:

  1. Combine the Saffron Co. Pure Saffron Threads in a small bowl with warm water. Let it steep for 10-15 minutes to release the saffron's vibrant colour and aroma.

Making the Cake Bites:

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.

  2. Whisk together the eggs and granulated sugar in a large bowl until light and fluffy.

  3. Add the saffron infusion, Saffron Co. Saffron Vanilla Aged Extract, melted butter, orange zest, and orange juice. Whisk until well combined.

  4. Sift the flour, baking powder, and salt in a separate bowl.

  5. Gradually fold the dry ingredients into the wet mixture, careful not to overmix.
